Our Baja Venus Clam come from a variety of the Pacific clam (Chione undatella). They are known for their smooth, oval shaped shells with a range of colors from light brown to creamy white, often with subtle banding. Our clams develope in pristine tidal flats and shallow bays of the Sea of Cortez, a Biosphere Reserve and federally protected area.

The pristine tidal environment where our clams spawn is a coastal area that experiences regular tidal movements (rise and fall of sea levels) and is largely untouched, unpolluted, and in its natural state.

Our wild clam thrive naturally in this environment, benefiting from the clean, nutrient-rich waters and minimal human activity.

Our clams are hand harvested without the use of dredges, prioritizing sustainability and minimizing environmental impact. This careful approach helps us preserve the delicate marine ecosystem and maintain the natural habitat. Hand harvesting also allows us to select clams at their peak quality, ensuring the best shellfish.

We support the natural regeneration of clam populations by closely monitoring their numbers and ensuring that enough clams remain to reproduce. This approach helps maintain a healthy and sustainable clam population. Our farm works closely with state and federal authorities to ensure compliance with water quality laws and regulations.

Similar to our oysters, the Chione clams are taken to the Whales Cove Mussel Farm for a cold conditioning shower. This process helps purge all the sand, ensuring you can cook them without worrying about any grit or pebbles. It extends their shelf life, keeping them fresh for longer.

All the previous gentle method helps maintain the integrity of the clams’ beautiful and elongated shells, making them perfect for various culinary dishes. Baja Venus Clams can be enjoyed raw on the half-shell, lightly steamed, or incorporated into recipes like clam chowders, seafood pastas. Their sweet and mild flavor pairs well with simple preparations that allow the natural taste of the clam to shine.
